As often seems to be the case, the 1900 census reports one year difference in the birth year for both Thomas and Mary. Thomas' known birth date from family sources is 2 December 1857, Mary's 20 January 1857.
The census reports that Thomas and Mary were running a hotel. In his Jenkins history, Harold Christian comments:
"The family suffered the loss of Great Grandfather Joseph Sanford on 26 May 1893.... By this point in time Joseph's brother-in-law Tom Chapel and Joseph's sister Lide were running a hotel in Marlow. The Marlow Magnet, Marlow's first newspaper, contains advertisements of Chapel's Hotel in many of its 1893 issues. (Copies of issues of this paper are on file in the library of the Oklahoma Historical Society near the State Capitol in Oklahoma City.)"

In these censuses, the family name is spelled Chappel. But I note that in the city directories, it is spelled Chapel, while there are other families whose name is spelled Chappel. This seems to indicate that they spelled the name as Chapel.
