Note that Simpson is reported born in Mississippi in 1860, but in Texas in 1870. I expect the report of Mississippi is correct, since in 1860 some children are reported born in each state. In 1870, Simpson was the only one left in the home who was born in Mississippi, so it would be understandable that the enumerator misunderstood or entered it in error. In 1870 Emily's birth state is also reported as Alabama, instead of Mississippi.
In the census you see his name is spelled Simpson, but on his gravestone the name is spelled Sampson. I suspect it is the gravestone that is in error. The birth date is also wrong. The birth date on the grave is 29 Feb 1846, but 1846 was not a leap year. Either day or year is wrong -- or both. The age in 1860 would indicate the birth year was 1847, but that was not a leap year either. The 1870 census age seems to point to year being 1848, which was a leap year.
